My number one priority is the quality of the food. I am never one to take shortcuts. Fresh ingredients are a requirement of mine in every case. Without them, I feel I am barefoot. To cover over a weak base with various spices is a chef's last resort. In our kitchen, such shortcuts have no place. Favourite dish: pasta.

The matter is quite simple. I know what I can and can't do. That is what I hold to. We here understand our strengths as a team and how we complement each other. Any kinds of tricks or taste intrusions don't belong on our stoves. Not improvisations either. Therefore, it is not difficult for us to place a menu before our guest and openly state which dishes will turn out best at a certain time and which not. The integrity of our kitchen is displayed time and time again through exceptional tastes. Favourite dish: wherever and however...fish in a hundred and one different ways.

Without complications. Yes. Simple. I like to create with few ingredients, because in doing so you cannot hide flavours with pepper, let alone with salt. Cooking can be truly creative. If for no other reason than because of the limitations imposed on us by the availability of certain ingredients. Favourite food: Apple strudel and Kobarid dumplings.
